Nut Free Granola

This nut free granola recipe uses oats and sunflower seeds for a crunchy, allergy friendly breakfast or snack. Making granola at home allows you to control the ingredients and avoid nuts often found in store bought granola.

Ingredients
  

  • 3 cups rolled oats
  • 1 cup sunflower seeds
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup honey or maple syrup
  • 1/3 cup avocado oil or melted coconut oil
  • 1 teaspoon vanilla extract
Optional Add-Ins
  • mini chocolate chips
  • dried fruit
  • coconut flakes

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, sunflower seeds, cinnamon, and salt.
  3. In a separate bowl, whisk together the oil, honey or maple syrup, and vanilla extract.
  4. Pour the liquid mixture over the oat mixture and stir until everything is evenly coated.
  5. Spread the granola mixture evenly across the baking sheet.
  6. Bake for 20 to 25 minutes, until lightly golden and fragrant.
  7. Allow the granola to cool completely before breaking it apart.

Notes

• For larger granola clusters, press the granola mixture firmly into the baking sheet before baking and allow it to cool completely before breaking it apart.
• Stir the granola once halfway through baking for more even browning.
• Always add chocolate chips or dried fruit after the granola has cooled to prevent melting or burning.
• Store the granola in an airtight container at room temperature for up to one week.
